Kilichi or Kilishi is an African food consisting of dried meat with spices. It is common under this name in West Africa, especially in Niger, Nigeria and the northern parts of Cameroon.
Kilishi is mostly made from beef, less often from lamb or goat meat. The lean meat that is as low in fat as possible is cut into thin slices and then briefly air-dried. After the first drying, the pieces of meat are coated with a spice paste and then dried again. When the drying is complete, the pieces of meat are usually briefly roasted over an open fire.
