Safou or Atanga: the fruit with a thousand virtues
Safou is a typical African fruit that is currently only grown in Africa. This fruit is of growing interest and its culture, which is currently growing rapidly, could very well extend beyond the black continent. In fact, the safou is very nutritious. It certainly doesn’t have the sweet taste usually attributed to fruit.
Like the olive or the avocado, with which it definitely shares some similarities, it is a fatty fruit that is low in carbohydrates.
Safou is also rich in minerals: phosphorus, calcium, manganese, iron, copper, zinc, etc. Hard-picked, some appreciate its slightly sour taste when it is still a little firm, others succumb to the charm of its creamy flesh when ripe . To make it more mature, nothing could be easier. For example, just put it in a jar and put it in a warm place in the house. And if you find that a white mycelium has developed on its surface, you can be sure that it will not affect the taste of the fruit. Others prefer it to be semi-dry. Once ripe, the best way to get a little dry is to keep it in the same warm spot around the house, but outside or even on a rack so that it is well ventilated.
