Discover Cameroonian culture: Koki’s dish
The black-eyed bean, black-eyed peas or Koki (Cornille cake) is a bean used in the preparation of koki dishes, a speciality of Cameroonian cuisine. It is made from black-eyed beans (Koki), salt, water and palm oil.
The bean is soaked, stripped of its skin and then crushed. The resulting paste is then wrapped in banana leaves and steamed. When the mixture is well and delicately handled, the result is a cake that is airy, soft and very pleasant to eat. As the banana leaves are not always easy to obtain, you can replace them with aluminium foil or cling film.
The koki or corn cake is a tasty dish that is eaten well with steamed ripe plantains or any other tubers (cassava, taro, sweet potato) also steamed.
